If you watch a professional chef at work, you may notice that, rather than using a full-handed grip on the handle of a chef's knife, they typically grasp the faces of the blade between the forefinger and thumb, with the other three fingers wrapped loosely around the handle to steady it.

That grip is the basis for this knife’s unique shape, which is designed to place the hand over the knife's balance point, permitting exceptional control in use. Simply rocking the knife back and forth yields an efficient chopping action, taking advantage of its substantial weight (450g, or just under a pound), pronounced curvature and extended heel to cut quickly with minimal effort.
