Anyone who has spent time in Asian food markets will recognize this cleaver. In Hong Kong, it is seen everywhere and used for everything.
Unlike traditional Western cleavers, this has a slightly curved blade so it is very effective for mincing on a chopping board as well as being used as a cleaver.
Also, because it is a single piece of stainless steel, it is virtually indestructible. The handle has various grooves forged into it to provide grip. At only 1 lb, it is very maneuverable.
Where it truly excels is when you want to transfer chopped bits from board to pan. The bits can easily be herded onto the wide blade, held with a cupped hand, and transferred directly to the pot or pan without inadvertently sprinkling the floor or stove top.
12-1/2" long overall, the blade alone is 8-1/2" x 4".
This would be received enthusiastically by any chef.
To protect the blade edge during storage, a high-impact polystyrene 8-1/2" x 2" guard is available separately.
