It was surprisingly difficult to find information on this flat, spoon-shaped wire whisk. What we did discover was that it was popular from approximately 1920 to 1940 and was used for whipping egg whites for meringues and angel food cakes and also for whipping cream.

Nowadays, flat whisks are used mainly for deglazing a pan and when making pan gravy or a roux. Their broad surface area provides much contact with the bottom of the cookware, which is essential for these tasks.
