| | These stainless-steel knives are all manufactured by Thiers-Issard in France. They are private branded for Lee Valley, but still have the famous four stars and elephant logo. (Thiers-Issard knives sold in Europe have the four stars and elephant with the "Sabatier" trademark.)
The "Maître de Cuisine" line is their top line. The knives are made from a premier stainless alloy and have epoxy-impregnated wooden grips that are impervious to meat, vegetable and fruit assault. Neither blade nor grip requires maintenance of any kind, except for occasional sharpening. All are forged, double tapered, and have integral quillons and bolsters. They will last for generations.
