For those who love shortbread, this pan will be a pleasure to use. Used to make the popular Scottish treat, it has a traditional thistle pattern (the thistle being Scotland's national flower). Made from fired, non-porous ceramic, it renders the pattern in fine detail while preventing the cooked shortbread from sticking to the mold. Shortbread is baked directly in the 8" diameter by 1/2" deep pan, then, after cooling slightly, it is simply tapped out and cut into pie-shaped pieces.

The mold is extremely strong, so there is no need to worry about breaking it when tapping. The instructions suggest oiling the pan before use, but we left this step out during testing and the shortbread still popped out with ease.
