This "Maître de Cuisine" chef’s knife is made from a premier stainless alloy and has an epoxy-impregnated wooden grip that is impervious to meat, vegetable and fruit assault. Neither blade nor grip requires maintenance of any kind, except for occasional sharpening. Made by Thiers-Issard in France, it is forged, double tapered, and has an integral quillon and bolster.

This style of chef’s knife is what the French would call a couteau passe-partout, a knife that does everything. This is the knife that chefs reach for to do everything from slicing and dicing to sectioning meat. It has a strong blade, with a spine that is 1/4" thick at the bolster; thick enough for the heel of your hand when you have to lean on one to get through a cabbage or a thick piece of gristle.
