The high-carbon tool steel in these blades makes a superior cutting tool in the kitchen. They are O1 tool steel, the same steel that has been used in Hock plane blades for decades. You will appreciate how easily they sharpen, and how sharp they get.

As the blades are high-carbon steel, they will discolor and take on a patina. A little care helps prevent corrosion – wash and dry after each use and never put them in the dishwasher. Sharpened often and lightly, the knives will perform well for generations.

All blades are sold without handles and include three steel pins. Dimensions given are thickness by cutting edge length.
