Instead of trying to maintain a consistent bevel angle while moving the blade across a stationary abrasive, you secure the knife against a magnetic support that holds it firmly at a fixed angle. You then roll the sharpener back and forth along the cutting edge, allowing the abrasive disc to follow the bevel accurately from heel to tip.
