Since 1957, Grohmann has been crafting high-grade knives in Pictou, Nova Scotia. With this full-tang blade blank, you can make a custom santoku knife. Supplied with basic instructions for mounting the handle scales, it lets you create a one-of-a-kind knife that is both practical and attractive.
The name santoku is derived from santoku bōchō, which means “three virtues” in Japanese and refers to the fact that this style of knife is equally well suited for preparing meat, fish and vegetables.
Made of German high-carbon stainless steel (Rc54-56), the 5/64" thick blank measures 11" overall with a 6 1/4" cutting edge. It comes with four brass rivets (including one spare) that can fasten handle scales made of the wood of your choice (available separately) measuring 1/2" to 5/8" in total thickness (two 1/4" thick handle scales recommended).
This blank is also offered as part of a set of four assorted blanks (along with chef’s, bread and carving knife blanks).
